Most pizza makers agree that achieving balance is essential for a great barbecue sauce. These sauces are usually made using a tomato base, vinegar, a sweetener such as honey or molasses, and a heat ingredient. From this basis, sauces can be enhanced with a variety of spices and flavours, including mustard, garlic, fruit and smoke. If a sauce becomes too dominant in one flavor, it usually doesn’t work well.
