But they were nonetheless flaky, buttery, classic in flavor, with a brown exterior and an airy interior, still hot from the oven and delicate enough to wrinkle under the slightest touch.

Had they been served on my plate at a local restaurant, I would have accepted these croissants as fresh from scratch. However, just 20 minutes ago, these pastries were frozen solid. Two hours ago, they were on a delivery truck headed to my house.
Wildgrain is a new and old concept: fresh bread delivery. It’s a monthly subscription service, offering a box of slow-fermented breads and pastries from any of 50 small bakeries across the country. Goods are baked, frozen and shipped directly to your table and ready for you to finish baking at home. In their own way, they are fresher than what you might get from a local bakery. A Wildgrain subscription arrives as a monthly box, filled with four, six or 12 items that may range from a whole sourdough loaf or fresh pasta to a package of six donuts or four large croissants. Frozen baked goods can be placed in your freezer to be ready when you need them – when the family stops by to visit on a Sunday evening, for example. Baking times range from five minutes (muffins) to 20 minutes (croissants and pumpkin biscuits). Baked goods do not need to be thawed before baking: you can put them in the refrigerator.
The reason this process works is because most of the bread has already been baked. Wildgrain contracts with small bakeries, according to company representatives, although their identity has not been revealed.
