Overall, a chef’s knife has an extremely sharp end point and a curved, sloping edge designed to work with a natural swinging motion for quick slicing that also allows for precise slicing. I have small hands, so I love the option of this small slicing knife for quick tasks that require more precise slicing, like mirepoix or herbs.

The blade on this USA-made 5-inch chopper is made of steel, a popular choice for chefs because it stays sharp, maintains a good edge, resists stains, and is generally very durable. Similar to my pick above, this New West KnifeWorks deluxe knife is absolutely gorgeous, with a bold red and white handle and accompanying embossed leather sheath. (Again, who wouldn’t love this gift?!) It’s perfect for hobbyists or home cooks. Designed in collaboration with nutritionist and TV personality Joy Bauer, the 6-inch Santoku Knife features a sturdy bottom blade and top slope, and is made of American-made 440C stainless steel. Unlike the other pick above, which is the traditional German chef’s knife style, this has a straighter edge used for precision. With this Japanese Santoku style knife, you’ll cut directly using the entire blade at once, or just the pointed end for precise, thin cuts.
